Oreo Owl Cupcakes

Oreo Owl Cupcakes


These fun owl cupcakes caught my eye for today’s post by nicolehill.blogspot.com.

To make an owl, pull apart an oreo cookie to make the large eyes. Use a chocolate candy for the centre, and another candy sweet for the nose.  I would probably chose ’Smarties’ sweets ( if you’re in the UK) as they come in various colours.

Place these on top of a chocolate frosted cupcake and voila! Enjoy!

Strawberry Angel Food Trifle

Store-bought angel food cake 24 oz. container frozen strawberries, sliced with sugar added, thawed 24 oz. or 3 cups vanilla pudding (We used 6+ small individual cups this time) 16 oz. container of whipped cream, slightly less than the whole container Fresh strawberries for garnish Tear angel food cake into medium pieces.  Begin layering cake, strawberries, pudding and whip cream in a large clear glass bowl.  Continue irregular layers, filling the bowl.  Top entire dessert with a solid layer of whip cream.  Slice a few fresh strawberries for garnish.  Refrigerate overnight or at least 4 hours before serving.  To me it tastes like all the flavors of strawberry shortcake in one big yummy bite!  I think it would be GREAT to add blueberries to this mix too.  Or nanners.  Maybe kiwi?  However, I’ll first need to find a purty bowl like mom’s.  Hint hint.

Fish Tagine – HelloFresh Review



Ingredients

2 teaspoons chermoula spice blend
1/4 cup continental parsley
2 tablespoons fresh coriander
2 garlic cloves
2 tablespoons red wine vinegar (or white vinegar)
3 tablespoons olive oil
350g firm white fish
150g couscous
300g water
1 red onion, cut into 8ths
2 carrots, sliced
1 vegetable stock cube
1 tin diced tomatoes
200g sweet potato, in 2cm cubes

Directions

Into the body of a food processor place chermoula spice blend, parsley, coriander (leave a little for the garnish), garlic, vinegar and 2 tablespoons of the olive oil and blend until smooth. Cut the fish into bite sized pieces and place in a bowl. Add the chermoula to the fish and coat well. Set aside to mainate.
Heat the remaining olive oil in a pot or tagine over medium-high heat. Add the onion and carrot and cook for 5 minutes until softened.

Crumble the stock cube in your hand then add to the pot with the tinned tomatoes and bring to the boil. Add the sweet potato and cook for 5 minutes. Add the fish and any remaining chermoula and cook for a further 5-8 minutes, or until the fish is cooked through.
Place the couscous in a bowl. Boil the water, pour over the couscous, stir with a fork and then cover the bowl with glad wrap and leave to sit for 5 minutes.
Divide the couscous between bowls and spoon the tagine over the top. Garnish with coriander and enjoy.

Mint Oreo Meltaways

No-Bake Mint Oreo Meltaways

1 1/4 cups finely crushed Cool Mint Oreos (approx. 15)
2/3 cup butter, softened to room temperature (do NOT melt butter!)
1 1/2 cups powdered sugar
1 Tbsp milk
4 Tbsp creme de menthe flavored syrup 
1/4 cup chocolate chips, melted

1. Combine cookie crumbs and 1/3 cup butter in medium bowl. 
2. Press onto bottom of ungreased 9x9 inch baking pan and refrigerate until firm.
3. Combine powdered sugar, remaining 1/3 cup butter, milk, and creme de menthe in mixing bowl. 
4. Beat at medium speed until light and fluffy (should resemble frosting.) Spread over crust.
5. Drizzle melted chocolate over crust and refrigerate until firm, about 2 hours.
6. Cut into bars; store in refrigerator.
